I’m pretty excited about our Christmas tree! It’s so pretty!

So,  I didn’t get a work out in today. Oh well. I came home and started dinner pretty much as soon as I walked in the door. Tomorrow’s run is supposed to be a tempo run, but since my knee was all twingy yesterday I think I’ll skip the tempo part and just do a regular 5 miles. Wow, 5 miles seems really far for a morning time run. Not sure how that is going to pan out. Don’t worry, I’ll report back on whether or not that 5 miles happens.

I found a new recipe on Allrecipes.

Sausage, Peppers, Onions, and Potato Bake


  • 2 teaspoons olive oil
  • 2 pounds Italian sausage links, cut into 2-inch pieces
  • 1/4 cup olive oil
  • 4 large potatoes, peeled and thickly sliced
  • 2 large green bell peppers, seeded and cut into wedges
  • 2 large red bell peppers, seeded and cut into wedges
  • 3 large onions, cut into wedges
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste


  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish. Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil. Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  3. Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

Edit: I forgot to tell you what I thought of this recipe, because I know you really care. First of all, it was more work then I care for right now. I had to cut up everything. Sausauge, potatoes, onions, and peppers. I’m not a really great multi tasker in the kitchen and this recipe took all my attention and then some.  I think it would be a good weekend recipe, or probably a good weekday recipe when I’m not so bogged down with homework.  Plus, I don’t love recipes w/  a lot of dicing and slicing. I’m scared I’m going to cut my finger off.

Taste wise: Chris thought it was “slammin’ ” I thought it was okay. I didn’t really care for the potatoes. Next time I will use red potatoes cut into quarters. I think they would work out better. I used regular potatoes and they didn’t cook as much as I would have liked. Chris likes raw potatoes {cuz he’s weird like that} so these potatoes were great for him. The sausage was delish, and apparently I loved sauted, then baked onions because even those were quite delicious!

This will make an appearance again in the LIBK household, but with red potatoes.

Yah, that’s pretty much how I feel since our cars were broken into last week.

This morning as I was walking around the house getting the dogs in their beds and getting ready to leave for work I noticed a truck parked across the street from our house. I watched them for a few seconds to see what they were doing, then I went downstairs to ask my Dad if he knew them. He said he didn’t know who they were. We stood in the garage and watched them for a few minutes then I went upstairs to call the Sheriff’s office. I’m not playing around. These guys were getting fishing poles out of the truck.. Hm, there is really no where that they could fish that they can get to by foot around our house. Were they going to break into my house? Probably not, but after last week, I can’t trust anyone. Believe dat!

So, I called the Sheriff’s office and they sent someone out to check out the truck and try to find the guys. Oh, I forgot to add that they disappeared by time I got upstairs to call the Sheriff’s Dept. The Deputy said he would walk across the street into this field that leads to the water- but there is no where to fish. It’s just marshy wetland with a few little open spots.

I’m just not cool w/ them parking across the street from my house @ 8:30 in the morning. I’m leaving for work @ that time and I don’t need them knowing my schedule. It just totally freaked me out. Thankfully my Dad is home all day today so that makes me feel better.

Today is a XT day for me in my training plan. Whether or not I actually XT tonight is debatable. I didn’t wake up early enough this morning to do anything, plus, My dad’s apt is downstairs right under the living room. I do not think he would appreciate me bouncing around at 6:30am.

I finished one of my classes last night, phew. Now I’m on to the next class. This one is Healthcare Reimbursement, I am hoping that my prior knowledge and the fact that I deal w/ it every day will help me to do well in the class and finish quickly. ~fingers crossed~

Yes, it happened.

I am happy to report that I got my butt out of bed not @ 5:15 like I originally intended, but still. I got up @ 6:30, and hit the treadmill at 6:42 . It was hot in my house, and the treadmill was boring. I poked out .89 miles on the treadmill and then went outside to finish the rest of my run. Uhm, hello summer humiditiy I thought you were gone. I was totally expecting a nice and cool morning. Wrong, so wrong. It was 66 with 90% humidity. Yah, 90%. I looked it up on wunderground.com. Frickin’ crap.

My run was not fast, nor was it pretty, but darnit I got it done. 3 mi, 30 min. 10:00 pace. Like I said, not pretty, or fast, but it’s done. I can concentrate on school tonight when I get off and not feel guilty for not running today.

I also had a little right knee pain (ugh) and some left hip pain during my run. Nothing that was intolerable but it was there, and it was nagging giving me every reason to quit. But I perservered. Ha.

Dear School.

I hate you. I feel like I am making no progress. I’m wondering why in the world I thought this would be a good idea. I know I only have until Feb 9th and then I am done. That also scares me. I am wondering how I am ever going to finish by Feb 9th, and actually pass the last class. You are stressing me out. I know it’s my own fault for procrastinating until I couldn’t any longer. This usually works out best for me, not this time.

Yay for pink stars! I know it looks red, but it’s pink, I promise. I’m still waiting for the limbs to drop on our tree before I put any more ornaments on it. I was WAY excited about this pink star and I could.not.wait to put it up! Wheee!

Want to see another one? LOLZ. Wyatt is not amused by this. I found some Reindeer antlers @ Joann Fabrics today. I am going to wear them in the Jingle Bell 5k that is planned for this coming Saturday. I asked Wyatt to hold still for 5 seconds so I could take a picture. He obliged. Then it turned into this:

bahahahah!   Diva was not having any of it. She wouldn’t hold still for .2 seconds, much less 5 seconds to take a picture.


Uhm, so tomorrow I have to get back on the running train. This 4 day weekend was filled with yummy, fattening food. Oy! I’m scared to get on the scale tomorrow, oh dear.

I also decided that I have to start running in the morning. There is just no other way I’m going to get my runs in. I refuse to sign up for another half marathon that I can not train for. I’m determined to run this half in March. Therefore, I need to be trained, which means, morning runs will happen. Oy!  — Tomorrow may be a treadmill run. We’ll see. My training plan says its a XT day, but honestly, I’m feeling so gross right now I think I need to run. Plus, I need to get rid of some stress. My brain is about to explode.

Random post of the day.

My Mom gave me my baby book. It was a book that she kept while I was little. Recording baby shower presents, Christmas presents, and trips that we took.

This one entry is awesome: I’ll let you read it for yourselfIncase you can’t read it, it says, ” We went to the dentist today to get our teeth cleaned and the hygienist said she felt for the man you married – he was going to have to be a MAN cos you were definitely a spirited lady. We’ll see! And you’re only 3 7/8! ”


Wow, the hygienist was quite right. My Mom has been telling me this my entire life. She also told Chris this when we first started dating. Hmmm.

Black Friday sin

I think I have committed a Black Friday sin. I get the impression that Black Friday is used to get your Christmas shopping underway, or heck, if you are really good, you might even get it finished.

Well, see, what had happened was:I went shopping, and didn’t buy one single gift for anyone but myself.

Some jackass broke into my car and stole my Garmin. Now, I’m quite reliant upon my Garmin, and I kind of feel like part of me is missing.

So, I was browsing the Black Friday ads to see if anyone was practically giving away a Garmin, and guess who was? Did you guess? No, not Best Buy, but I think they had one on sale. Staples! Staples had the Garmin Nuvi 265wt. The darn thing practically drives the car for you. No, but really, it tells you where there are accidents, also gives you current restaurant promotions. Seriously, it told us that Red Lobster Surf  ‘n Turf is like $14.99 right now. Crazy. My old Garmin never did that.

and then, the craziest thing happened. My car drove me to JcPenney. Crazy car.

I might have stumbled over to the jewelry counter and took a gander at the birth stone rings. You see, I’ve been really wanting a right hand ring. For like, 2 years. Well, almost. Our anniversary is in February, so it will be 2 years in February.

Plus, my birthday is coming up. So, I bought myself a birthday present from Chris. Ha ha ha.

I also got some hair stuff from Jcpenney that was a SUPAH good deal! Then I came home. I can’t handle crowds, Staples, and JcPenney was plenty.

We spent the rest of the day in Davenport with Chris’ family. It was good to spend a few hours down there and catch up with his family. We also go to go back to our old neighborhood and see some friends. Fun times!

Chris and I ventured over to my Mom’s house around lunch time. Chris worked outside, while I helped my Mom in the kitchen. I’m ready for turkey! turkey! turkey!

Not the great picture, but whatever. It’s me and my neice Kailyn, we are making broccoli salad, yum!

Aw, I just got to see my good friend Kelly, darn, I didn’t take a picture of us. I should have. Crap. She lives in Macon and we don’t see each other, or really talk often enough. It was so good to catch up w/ her. Dare I say I’m thankful for her friendship. Fine, I’ll show you an old picture of us.

Some piece of trash broke into , or maybe just opened my door, and stole my i-pod(s) and my GPS out of my car.

I always put my stuff (purse & backpack) on the passengers side; and when I opened the door I noticed my glove box was open. I really didn’t think twice about it, I thought maybe Chris had been looking for something. Whatever. Then I was driving to work and I wanted to listen to something on my Ipod (my car has an aux cord that was made for Ipods).. So i opened my center console and didn’t see my Ipod. Weird. Then I realized the cord for the ipod was hanging out the other side of my console. Even weirder. Then I start looking for my other Ipod (yah, I have a touch and a nano).. not in my glove box, i’m starting to get annoyed.

Then I looked @ my cigarette lighter and realized my GPS wasn’t plugged in, and it wasn’t on my windshield. Sometimes it falls down so I looked around and realized it was gone. Some douchecanoe broke into my car.

I called Chris. Told him my stuff was gone. He tells me that his door wasn’t shut all the way this morning when he went to get into his truck. FUGH.

He is now @ work, and in his work truck so he can’t check out his truck, so they or may not have taken some stuff out of his glove box.douchecanoes.

I called the police as soon as I got upstairs to my office and decided I’d wait till we were both at home to file the report and have them come out.

Then I started freaking out about OMG I don’t think I locked the front door, oh my gosh what if they went in my Dad’s apartment (he wasn’t there last night). Yah, i have a total break down and start freaking out.

I called a local pawn shop and he told me that I need to file a police report, and that they can’t tell me anything that has been brought in. That doesn’t really make sense to me- If you understand that rule, feel free to explain. I can go there and buy stuff, but I can’t know if someone pawned my stuff? huh?

So, then I called the police again and had them come and take my report, I can’t stand sitting around doing nothing. The Office came, and he was really nice. I started crying, again, as soon as he pulled up and asked me how I was doing. HA.

He then told me that I was not the only person to call this morning that several other people in my neighborhood had called and said that their vehicles had also been broken into.  In a weird way, I felt better. Like, at  least we weren’t targeted specifically. I do not wish theft upon anyone, but I found weird comfort in it.

The Officer told me that they get a list of things that are brought to the pawn shop on Wednesdays and they compare items that have been reported stolen w/ items on the pawn list. So, there is a small, small, small chance that I may actually see my stuff again. small. I emphasize the word small.

Lesson Learned. Lock my car always. I guess they could have broken in even if the car was locked.

Excuse the new theme. I am working on finding something that works for me. I totally suck @ this. So it could take a while. Bare with me as my blog will probably change 500 times before I find something I actually like. =/

I must be crazy, right?

Would it surprise you to know that I already have my next half-marathon planned, and the training plan printed out?

Yah, me either.

Yesterday when we were struggling through miles 10-13, telling each other to embrace the suck, I mentally swore off half marathons. What happened, you ask? My freakin’ pride. It get’s in the way sometimes. I can not have that Women’s Half Marathon conquer me. C-A-N’-T.

This morning as I was talking to Carolyn about possibly running another half. We talked about needing/wanting a longer training plan.  We thought 16 weeks would be good.  16 weeks gives us a few times to miss runs, whereas, 12 weeks doesn’t. She travels, I’m drowning in school; We will need those extra weeks, I’m sure. I also thought this would give us a few weeks break, maybe a month. wrong. The half is on March 20th. 16 weeks of training would begin on November 29th, as in, next Monday. OMG readers, that is soon.

Note: I’m not saying Carolyn is doing the half. She thinks I’m crazy too. We did talk about it briefly this morning though.

What am  I doing to myself? This is bonkers. emphasis on bonkers.

So, I present to you, my readers, (I won’t even joke about all 2 of you, because everyone uses that joke).. My new training plan. training. (Yeah, it won’t let me upload the document, or I just don’t know how to do it right. It’s probably the latter. ) PS.THE DOCUMENT IS UPSIDE DOWN. MY SCANNER WAS BEING UNRULY THIS MORNING.

I came home today and did 2 easy miles (19:28, 9:38 pace) on the treadmill. I wanted to see how my legs felt. I was actually pleased that running didn’t hurt. Walking, and sitting, well, that’s another story.
