Where have I been?

I’ve been kind of MIA for the last few days, I guess I was kind of busy. I don’t know with what, but I must have been.

I had a great run yesterday, I had to talk myself into it, and after I was done running I was totally glad that I did! 3mi on the dreadmill, 9:01 pace, finished in 29min. Not to bad, much better then most of my dreadmill runs. I am getting back into my running groove, thank goodness.

I haven’t run yet today, don’t know that I’m going to.. I am ‘supposed’ to be doing homework right now until 3:30, then from 3:30 until Chris gets home I’m going to pick up the house.. I have to give myself a schedule otherwise I’ll sit here and do nothing.

I am signed up for 2 races in August- I forget if I’ve already told you this. I’m doing the Zoo Run Run 5k @ the Lowry Park Zoo . Then I’m doing the Ace of Clubs 10k, uhm, I think that one is in Safety Harbor. I’m excited!

I printed out a marathon training schedule. It’s extra extra long. I want to have a good long time to train so I can wrap my head around what I’m doing, and so I’ll feel fully prepared for what I want to accomplish. My half marathon pace is 8:45, obviously I doubt I could maintain that pace for 26 miles… I would like to finish in 4:15, which is a 9:45 pace. I’m not going to focus on speed/time to much as much . Especially since it’s still so far away.


I went to some garage sales this morning. I am learning that I really don’t actually like going to garage sales. I haven’t found anything while I’m out that makes me just want to go every weekend. I am still searching for nightstands for our guest room, a dresser for our guestroom, and barstools. All of which are seemingly impossible to find at garage sales,  or at least the ones I go to. I ended up with 1 book by Nicholas Sparks, a vase/jar thing w/ some sand/shells & a candle in it (bc I need another vase w/ shells in it =/  ) … and 4 yankee candle tealights… yah, not really impressive.

Then I went to Goodwill hoping they might have something I’m looking for.. Well, I did get a pair of shoes. I was a little leary of buying shoes @ Goodwill, but these are cute, and they fit, and they were $5 so what the heck, why not. I also caught some hot curlers. Yah, I don’t curl my hair, I don’t even know how, but for $4 I’ll figure it out!

I did pretty good w/ my lunch today. I was starving while I was driving around town from garage sale to garage sale, so tempting to stop & get some junk. While driving around I found the produce market I was looking for, YES! I knew there was one somewhere, I just couldn’t remember where. It’s called Murphy’s Market (i think). It has quite a bit of fresh produce, yay! Also has some meat, which I think was kind of expensive, but I didn’t pay to much attention as I didn’t know what kind of meat I would need for next weks dinners. They also had some canned goods, which were outrageously priced, and a few other things. I got a pineapple, 2 yellow squash, some carrots, and a Mocha Frappucino (lol, yah not produce but i was thirsty).. anyways, all that only cost me $5 and some change.. I thought that was pretty impressive.

Then I went to Publix to get some bread, bc we were slap out. I also picked up my first veggie burger, I must admit, it was pretty tasty. That’s what I had for lunch when I got home.


Kay, I have to quit procrastinating now. I need to finish this chapter in the next 6 minutes- I don’t see that happening.


Pepperoni Bubble Pizza

When I went grocery shopping on Sunday the sample lady was out at Publix. She had Pepperoni Bubble pizza, mm mm yummy! I picked up the paper that had the recipe on it and I whipped it up tonight. Super easy.

but this is the recipe:

2 (12oz) can layers buttermilk biscuits
1 bell pepper finely chopped
1 onion finely chopped
2 (8oz) cans Tomato sauce
1 (3.5oz) pkg of hormel sliced pepperoni —  I used turkey pepperoni
1 (8oz) bag of shredded mozzarella cheese

1. Preaheat over to 425*. Coat a 2qt baking dish with cooking spray (just realized i didn’t do this)

2. Chop bell pepper and onion; place in medium bowl

3. Cut biscuits into small bite size pieces (8-12 per biscuit; add to peppers and onions. Stir in remaining ingredients (Except cheese). Transfer to baking dish; Bake 20 minutes, stirring once (didn’t do this either)

4. Remove pizza from oven; stir once. (nope) . sprinkle cheese evenly over top; bake 10 more minutes or until cheese is melted and golden.

–This was a quick and yummy meal. Both Chris and my Dad liked it. They both asked if there was meat in it, lol.. YES, there’s pepperoni, that counts, right?  They think I’m trying to turn them into vegetarians or something.  They said it would be good with chicken in it, I agree, it would be pretty tasty with some cut up boiled chicken.


I am not running today. Last night I didn’t get to do any homework because I was helping my Dad write up a contract; so I should be doing homework not instead of blogging =/  .

So this is short & sweet.

Bad boys, bad boys..

I absolutely love Bad Boys 2. It’s my favorite movie of all time, I never ever get sick of watching. It was the perfect pick for my treadmill movie today! It got me 3.8 miles! My longest run since I’ve been back on the running wagon!

This is my favorite scene.. If you are easily offended I’d skip the clip.. It’s the Hatian shoot out scene, there are tons of F-bombs, and lotsa shooting..


We had a yummy dinner tonight. I got the idea from Cara’s Cravings – I modified mine.

Noodles with Zucchini, Shrimp, red peppers & Italian dressing- I don’t have a fancy name for it. That’s just what it was.

Whole wheat pasta noodles
2 1/2 cups of chopped zucchini
balsamic vinegar
red pepper deseeded & chopped
1 pound shrimp

Boil noodles until tender. Put balsamic vinegar in a frying pan heat on medium, add chopped zucchini & chopped red peppers. I cooked the zucchini till they brown.

Boil shrimp for about 3-4 minutes, I put the shrimp on last because they only take a few minutes to cook.

Drain noodles, add zucchini/red pepper mix, peel shrimp, we added italian dressing on top, gave it a zesty flavor!  VOILA! a yummy-licious meal!

Next time I’ll make more, we only had enough for the three of us to have one serving, which is fine, but leftovers for tomorrow would have been nice.

I was really happy with how it turned out, Chris & My dad said it was pretty good! SCORE! always good when they like a fairly healthy meal – and it was SUPER easy.


In other running related news. I am really really really thinking about running a marathon in 2011. There aren’t very many in Central Florida.. and there are none on the West Coast of Florida. There was one in Clearwater but as of right now it has been cancelled =(    . That one would have been perfect.

So, I’m thinking about doing this one, The Melbourne & Beaches Music Marathon – It’s on Feb 6, 2011. Our 2 yr anniversary is Feb 7, so we could make it a weekend getaway!! It’s on the East Coast so its a good few hour drive for us. My aunt lives in Cocoa Beach and we will stay with her, so that will cut out the cost of a hotel.

I want a nice & long training plan. I want enough time to build up my mileage so I don’t feel overwhelmed/scared.  I am planning on doing at least 2 half marathons before Feb 2011.

I am intimidated by the thought of 26.2 miles, and the fact that I haven’t been running that long. In Feb 2011, I will have been running 1.5yrs… I have read/heard, that you should be a runner for several years before attempting your first marathon. But I’ve also seen other runners complete their first marathon without several years of running behind them.

We’ll see.

Run Thru Hell 5k

I ran my first 5k in months today. It was actually a lot of fun. I ran it with my friend Carolyn. It was a trail race, my first trail race ever. The description of the race online wasn’t really great. I thought I had read that it was partially a trail race, but then I went on active.com last night to look  @ it again and I couldn’t find the description that said trail race. But when we got there we found out it was def a trail race, someone told Carolyn not to worry about getting a PR, and hopefully she didn’t wear her good shoes, bc it was going to be muddy.. lol oops.

Yeah, it was muddy. I guess they really don’t look that bad, they were pretty squishy though!

The race itself was okay. We started out on a regular concrete trail.. Then we took a turn and ran through a grassy field and then got back on the regular trail. Somewhere after mile 1 we turned left into the woods- they had a tiny water stand…. almost immediately after turning into the woods we hit the first mud puddle. .. it was pretty much single file for the majority of the trail, you could only pass in certain places. We did pass a few people at one point, we were running 11:00/mile.. .. I was ready to be done by time we got to the 2.5mi… I was steady checking my watch to see how much further. .. finally we finished. I don’t know what my official time was, I had to leave right after- but my garmin said 27:50, which was 8:46 pace.. not to bad considering it was my first trail race, we ran single file for a while, and I haven’t raced since May. I was happy.  My only beef with the race was the lack of water.  Normally water on a 5k course is not such an issue for me, but hello, it’s July 11th, in Florida!    The lack of water at the end of the race was even worse. They had one gatorade cooler with warm water in it. You had to stand in line and hope there was water in it by time you go to the cooler.. There was another cooler located a little further away, and even still that wasn’t great.  All the races i’ve run so far they had very cold bottled water @ the end of the race… maybe next year?


After the race I hurried home to go out on the boat w/ the fam…. yeah, about that. The weatherman lied. Per the weather this morning it was supposed to be 0-1ft seas, with the wind @ 5knots..instead it was 3-4ft seas, with @ 25knots.. wth?   It was banging us around all over the place. The plan was to go to Anclote Key –

Which is a pretty good little ride from Hernando Beach, it would have been a LONG ride had we continued on. Instead we turned around and headed back to a friends house to hang out by the pool. I’m sad we didn’t get to go to Anclote Key, my Dad said there are lots & lots of sand dollars =) I love sand dollars!

I think I am back on the running bandwagon now. My running was pretty consistent this week.

Why can’t my regular runs be that fast.. I don’t push myself, that’s why. I really need to step up my mileage, but the treadmill is SOOOOO boring.. I’m hoping to move my treadmill out of the living room and into the office. Once it’s in the office I want to get a little flat screen TV that we can mount to the wall so I can watch Tv.. Yes we have a tv in the living room, but in order to see it while I run the TM has to be out in the middle of the living room, and it’s just in the way. Right now its next to the entertainment center. I downloaded a podcast for my i-pod, which is okay, but it only keeps me interested for about 2.5miles, after that I start getting bored.

I am searching for upcoming races. There are quite a few 5ks coming up, yay! One 10k, and a 15k, then all the half marathons start in October, exciting!!!

— Well, its 8:45pm, and I haven’t done a lick of homework. I should probably go do that.

I like to read.

..but I don’t like to read school books. I mean, who does?

My extension for school was granted, I have till 2/2011 to finish… I know that sounds like SO far away, but it’s not. It’s 6.5 mths.  I gotta get crackin’ on this school crap. I really want to be done. I only have 3 more units in the class I registered for last night. If I’m a good student and sit my ass at this table for a few hours I knock out this class. Then the next class is some more boring crap, then the next class is where we get into the nitty gritty, that is what I’m looking forward to. I actually get to do crap that is related to my ‘field’.. This crap I’m reading now is just ridic. I mean, I suppose it’s useful, but it sure as heck doesn’t feel that way.

I don’t know that I will be getting in a run today. We are going out to eat some wings tonight, and I doubt I’ll run when we get home. I don’t really like to run after I eat, I don’t do well with my food jiggling around in my belly, yuck.  Running before we go out is not an option. I will run tomorrow. I have to. I have a 5k on Sunday and I’m not totally convinced I’m going to be able to finish. Lame =/

Crap. I had to ask for an extension for my school contract. I am doing Kaplan “University” Medical Coding program. I was “supposed” to be finished on Aug 12. Ha Ha HA! That is soooo not going to happen. Life has been so hectic since November 09. I hardly had time to do school, sure I had SOME time, and did I take advantage of that time? No. So, I find myself with a month left before I am “supposed” to be finished, and I’m only on class 4 of 12. .. I suck. So today I called the school and they told me I had to fill out a form and fax it in .. okay fine.

I really need to get a schedule, and stick to it!

Not record breaking speeds, but good enough for now. I found some good websites that have a bunch of local races coming up. Thank goodness, I was having race withdrawals! I really need to have races planned because it gives me something to train for. There is a 10k in Sept, a 15k in Oct, and a half in Oct that I want to sign up for. I doubt that I’ll be able to do both the 15k and the half in Oct.. not a physical limitation, but that is a lot of money/traveling for races. I know the half is about 1.5hrs away.


I made pizza for dinner tonight. It was pretty delish. The crust wasn’t the greatest. I was lazy and bought pillsbury pizza crust. yuck. I need to find another crust. I usually make my own but that is quite the process and it’s not really an after work kind of dinner. We had mushroom, pineapple, and ham pizza.. all those toppings on one pizza equals yummy-deliciousness!

Tomorrow’s dinner is probably going to be equally as bad.  Chris mentioned going to have wings. I asked my Dad where a good wing place is.. hooters , ick.. Winghouse.. meh… Beef’s.. meh… then he said well we could go to Ollie’s & have oysters. mmmmm. I love me some oysters!  Ollies has this amazing nacho plate, oh my goodness, amazing.

Messiest cook.

Chris makes fun of me because I use a bunch of pots when I cook. I can’t help it. I’m just messy. I made black bean burgers Tuesday night and they were no exception to the use every single pot in the house rule. Eve my Dad commented on my messy kitchen. He said “What did you do, use every single pot and pan you could find?” … well maybe! not quite every pot, pan & dish.. but close!! But the burgers were darn good! I must admit that I was pretty impressed with myself. I always get so nervous trying out new recipes..and this one was no exception. Probably a little more nervous because it was so out of the norm for us. Black bean burgers, no meat, yah. Not usual for us. We also had Roasted Jalapeno Mashed Potatoes! Those were also a success, awesome mashed potatoes!!  Chris & My dad both like dinner Tuesday night! YAY!

In other news: I finally finished Shoe Addicts Anonymous. It was a pretty good book. Chick lit is not really my thing, but it was pretty cute. I would recommend it. It took me a few weeks to read it.. Not because it wasn’t interesting, I just don’t have a ton of time to sit around and read. I shouldn’t be reading library books anyways, I should be reading school books..

Speaking of school, I got an e-mail this morning from the school basically telling me I suck, and that I’m going to have to extend my program. I’m going to have to pay extra in order to finish. Ugh. It’s my own fault, but bleh. Life just got way to busy, plus I’m just horrible at sitting here and reading for hours on end. They recommend “studying” for 8-12 hrs a week. uhm yah, about that.


I started running….again. I know, I know. This is like the 3rd time I’ve started running. Well I registered for a 5k so I’m hoping that will get my motivation in full gear. It’s called Run Thru Hell and its a 5k in Tampa.. Should be interesting. Its not the normal street race, I’m hoping it’s going to be fun. I’m obviously not looking for a PR just to be able to run and finish the darn thing.

I am trying to build my running base back up so I can start training for a half in the next month or so. There is a half at the end of October I want to run in, and also one at the end of November, and December, and January. Ha ha.. I am definitely doing the one in November. All the others are just tentative!

Happy 4th of July!

I hope everyone had a great 4th of July!

We sure did! It was filled with family fun! We got up early yesterday and finished unpacking all the boxes we had inside (yay!) . Then my family came over.. Well some of them, not everyone could make it.

It was a great time! I had a lot of fun playing with my nieces and nephew, and just getting to hang out with my family. We had  a full house of 10 adults, and 3 kids, and 1 little bitty baby!

It was lots of loudness,and lots of fun. We had good 4th of July food. Hotdogs, hamburgers, baked beans, pasta salad, macaroni salad, potato salad, lots of fruit, beer & dessert!!

Sadly the weather has not been cooperating here. It’s been raining for about the last 4 days. Don’t worry though, we played with sparklers in the rain! It was only sprinkling last night so were able to play with sparklers, and set off the few fireworks we bought. Fireworks are stupid expensive. Ridiculous!

We had a great time, and I was super worn out and ready to go to bed by time everyone left! Our first party at our new house was a total success! yay!

First of all: Congrats to Tampa PD on the arrest of Dontae Morris . I am so thankful that scumbag is off the streets. I could say a lot more, but I’ll just leave it at that.

R.I.P Officer Jeffrey Kocab & Officer Dave Curtis

Officers Kocab & Curtis were laid to rest today at Idlewild Baptist Church – I am so glad their families can hav peace knowing that their killer is behind bars.


I am attempting to make our household a little bit greener. I do my part to make waste, but I don’t do my part to recycle like I should. So, I am on a mission. My mission is to recycle as much as I can, and to do as much as I can to make our house just a little bit greener, with in reason. I doubt I’ll become a vegetarian or a vegan. I do plan on trying to eat a little less meat though. I am intrigued by all vegetable/bean/rice meals. I’m going to be stalking some blogs of some ladies that I know eat no meat.

I went to this website to learn about what things I can recycle at our local waste management place. I really have NO excuse for not going there. It is literally on my way everywhere. I have to pass it to get out of Hernando Beach -unless we are going to Aripeka, and there is nothing in Aripeka, so I don’t have any excuses. .. so that list on the Hernando county website was super helpful. I went there trying to find out if you can recycle milk jugs, uh yah, you can. You can also recycle shampoo bottles! GREAT! Laundry detergent bottles, cooking oil bottles, oh my gosh, there is so many things you can recycle. It’s like a whole new world has been opened up to me. It’s great!

I even set up a recycling bin in our house. For now it’s in the kitchen until I can get more organized and find a better place for it. Plus, we are having a 4th BBQ tomorrow, and I want the bin out in the open where our guests can see that they need to place their recyclables (is that a word?) in the bin, and not the trash.  I also bought some of those cloth bags they sell @ the grocery stores. I have a total of 6 for now. I had 2 pretty pretty pink ones from Winn Dixie, a ginormous one from Aldi, 2 from publix , and another one from publix that I got when I ran in Gasparilla! This is great!

The other thing that we are going to start is reusing towels. We currently use a bath towel one time and then put it in the dirty clothes. Using a towel twice, or three times totally skeeves me out. But If think rationally about it, the towel is still clean. Right? So, we are going to try this. We’ll see how it works out.


I went to the grocery store today & they had wine samples, Oh Goodness! Exciting! They were sampling this new wine Chocovine. I’ve been eying this bottle of wine for a few weeks now. I couldn’t decide if I thought I would like it or not. It was delish! Tasted just like chocolate milk with a little winey twang. mm mm good. I bought a bottle.

Then I just had to go browse the wine aisle. I wanted to find the Cupcake wine, I wanted to try a different kind. Couldn’t find it. So, instead I got a wine that is made right here in Florida. Sweet blueberry, sounds delish! Can’t wait to crack that baby open!



Tomorrow we are having our first 4th of July party!  I really should be unpacking right now. Chris is asleep on the couch. He has been working a lot of hours so he’s been pretty worn out when he gets home.  I should end this so I can go unpack and clean up.

Quiet around here.

It’s been really quiet around my blog this week. It’s been a long, emotion filled week. My mood has been pretty somber and I didn’t have anything happy to share, or say. So I guess I just stayed away. Today is really not much better.

We found out this morning that Chris’ cousin, Kent, lost his battle early this morning. My heart goes out to his wife, and children. I will remember the good times that we shared with Kent.

The services for Officer Kocab, & Officer Curtis are today.

It’s just been a really sad week.

I saw this video on CMT this morning, and I thought it was pretty appropriate for this week.


On a more happier note, I am really loving my job. It’s been just over a month since I started, and everything seems to be going really well. Sometimes I get overwhelmed, but I usually call someone that might be able to help me, or google the heck out of it and I can come to a resolution.

It’s 4th of July this weekend, and that’s exciting! I’m feeling very patriotic this year. Not that I don’t love my country, but I’m feeling extra patriotic this year. I think I might even decorate the house for the weekend!
